Strawberry shortbread tartlet recipe

Luant shares with us the recipe for our strawberry shortbread tartlet.

List of ingredients:

 

Very shortbread:

 

  • 80gr Soft Butter
  • 80gr Sugar
  • 140gr Flour
  • 1 tablespoon of salt
  • 2 Egg yolks
  • 6gr Yeast

Crème pâtissière

 

  • 40gr Egg yolk
  • 75gr Sugar
  • 25gr Maizena
  • 250ml Milk
  • 0.5 Vanilla pod

Making the very shortbread dough

  • Whiten the egg yolk with the sugar
  • Add the softened butter
  • Add flour, sugar, salt
  • Mix everything until you obtain a sticky dough
  • Rest for 1 hour
  • Cut them into blocks of the desired width
  • Cook at 180°C for 15 minutes

 

Making the custard

  • Bring milk to a boil
  • Whiten the egg yolk with the sugar
  • Add the cornstarch
  • Pour the milk over the preparation
  • Thicken over low heat until you obtain a thick cream

 

Editing

  • Take the puck of shortcrust pastry
  • Poach a thin dose of cream in the center
  • Add the strawberries cut in half
